Sweet Potato Pizza

Sweet Potato Pizza Toast 

Feel like pizza but don’t want to order unhealthy take-away and don’t have time to make your own pizza base? Here is the answer! 

Ingredients (serves 1)
2 slices of bread (I used multi-grain gluten free)
2 tablespoons of pizza sauce
100g of soy cheese
1 small purple sweet potato (boiled)
1 handfull of spinach, chopped
1 fresh tomato, thinly sliced

Method: 
1. Pre-heat oven to 180 degrees. 
2. Top bread with pizza sauce, sliced tomato, sweet potato, spinach & top with soy cheese.
3. Place in oven untill the cheese is melted & the bread is crisp.
