Easy Christmas superfood salad

Since you’ll likely be tempted by plenty of rich food this Christmas, we’ve come up with a healthy, easy Christmas salad to help redress the balance!

The super-charged ingredients of this simple salad collectively contain vitamin B-3, vitamin B-5, vitamin C, vitamin E, vitamin K, calcium, iron, folate, beta carotene, magnesium, potassium, chlorophyll and antioxidants. Not convinced yet? This might sway you: it also tastes delicious!

Ingredients

2 tbsp olive oil

1 onion, finely chopped

1-2 garlic cloves

Pancetta or bacon, cut into cubes

150g kale, finely chopped (remove any big ribs, but small ones are fine)

150g spinach

300g broccolini stems

300g asparagus spears

Method

Fry the oil, onion and garlic in a frying pan over medium-high heat until the onion starts to turn translucent.

 

Add the kale, and keep stirring as it reduces in size (approximately 5 minutes). Add the spinach and the pancetta or bacon. The spinach should cook very quickly. Meanwhile, trim the asparagus and broccolini and steam them until a skewer passes easily through the thickest part of the stem (this should only take about 5 minutes).

 

Serve warm or cold on a platter with the onion, bacon, kale and spinach mix layered over the top. Enjoy!

TIP If you can’t get your hands on kale, the salad is still great with just spinach or even silver beet as the topping. And the good news is, silver beet is also a superfood!
